"I came up with this recipe when I was running out of butter! Heavy cream makes them taste lighter than butter, but still rich. I love to serve these scones with orange marmalade jam, and sometimes with greek yogurt instead of clotted cream because feel no guilty!"

Ingredients

66⅔ g
flour
tsp
baking powder
½ tbsp
sugar
66⅔ ml
heavy cream
jam (for serving)
non-fat Greek yogurt (for serving)
clotted cream (for serving)

Utensils

large mixing bowl , spatula, baking sheet, rolling pin, round cutter

  • Step 1/4

    Preheat the oven to 190℃

  • Step 2/4

    • 66⅔ g flour
    • tsp baking powder
    • 66⅔ ml heavy cream
    • ½ tbsp sugar
    • large mixing bowl
    • spatula

    Sift flour into a mixing large bowl, mix together with baking powder and sugar. Pour heavy cream into the bowl, then lightly mix together until combined.

  • Step 3/4

    • baking sheet
    • rolling pin
    • round cutter

    Gently knead the dough with your hands until smooth and soft. Roll out to about 2cm thick, stamp out using a round cutter. Place on a baking sheet.

  • Step 4/4

    • jam (for serving)
    • non-fat Greek yogurt (for serving)
    • clotted cream (for serving)

    Bake for 15-20 minutes until lightly golden and well risen. Transfer to a wire rack to cool slightly.
