    Wash and peel the cucumber, halve lengthwise and remove the seeds, cut the cucumber into half moons. Peel and dice the onion. Prepare the rice according to the packet instructions.

    Heat the oil in a large frying pan. Add the mince and onion and fry over a medium-high heat until crumbly and browned, approx. 6-8 mins. Season with salt and pepper and remove from the pan. Stir-fry the cucumbers for approx. 3 mins., then add the mince again.
