Vegan red berry crumble
Ingredients
Step 1/8
- 112½ g flour
- 50 g sugar
- 55 ml sunflower oil
- ⅛ lemon zest
- 1 g baking powder
Mix the flour, zest from lemon, sugar and baking soda together. Add the oil and mix until a crumbly dough forms. Put this in the fridge for 30 minutes.
Step 2/8
- 106¼ g red berries
- 8¾ g starch
Mix the fruit with the starch. I used strawberries, raspberries, and blackberries.
Step 3/8
Use a rectangular oven tray (20cmx30cm). Cover the base with a baking sheet.
Step 4/8
Add half of the dough to the oven tray and cover the base with it. Press it down, not too firmly.
Step 5/8
Add the fruit on top.
Step 6/8
- 3¾ g dark brown sugar
Mix the dark brown sugar with the other half of the dough and crumble this over the fruit layer. Make sure everything is covered.
Step 7/8
- ¼ tbsp unsweetened shredded coconut
Spread the coconut on top.
Step 8/8
Bake in the oven at 180 degrees for 40 minutes until golden brown. Let cool down for at least two hours before cutting.
