- 4 tomatoes
- 2 scallion
- 4 eggs

Cut tomatoes into wedges and slice green onion crosswise. Crack eggs into a small bowl.

- 6 tbsp vegetable oil
- frying pan
- cooking spoon

Beat eggs with a fork. Then heat some vegetable oil in a frying pan over high heat. Once oil is hot, pour in eggs and stir quickly. Continue to cook until eggs are set, then transfer eggs to a plate and set aside.

- 8 tbsp vegetable oil
- 2 tsp salt
- sugar
- frying pan
- cooking spoon
- Veggie Wunder seasoning
Add a little vegetable oil to the pan. Sauté spring onions for approx. 1 - 2 minutes. Add the tomatoes and season with salt and add sugar to taste. Simmer for approx. 5 - 7 minutes on medium heat until the tomatoes are soft. Add the eggs, mix well and heat up again. Enjoy with rice!
