The best whole grain bread
Ingredients
Step 1/7
- 11¼ g cracked wheat
- 32 g water
Cook a “porridge” with the cracked wheat and the water under a lid for 15 minutes and then let it cool down.
Step 2/7
- 2 g fresh yeast
- ⅛ tbsp salt
- ⅛ tbsp honey
- 24 g water (lukewarm)
Crumble the yeast in a bowl. Add lukewarm water and stir and then add the honey and the salt and stir again.
Step 3/7
- 9⅝ g whole-wheat flour
- 2⅜ g wheat bran (optional)
- 38⅜ g wheat flour
Add everything else (including the porridge) and mix it to a dough.
Step 4/7
Let the dough sit for at least 3h (or in the fridge overnight).
Step 5/7
Bake out the dough and put it in a buttered ,2 liter ,bread form and let sit for 30 minutes.
Step 6/7
Bake the bread at 200°C for 50 minutes and the 10 minutes without the form.
Step 7/7
Let the bread cool down wrapped in a towel.
