Tagliatelle with pan-fried shrimp and mixed cherry tomatoes

- 2 cloves garlic
- 1 shallot
- 125 g mozzarella cheese
- 300 g mixed tomatoes
- 5 sprigs basil
- 200 g tagliatelle
- 200 g shrimp
- 3 tbsp olive oil

Finely chop garlic and shallot. Chop mozzarella cheese. Halve tomatoes and roughly chop basil. Boil water for the pasta. Add salt and pasta to the boiling water and cook them until al dente. In the meantime, heat olive oil in a frying pan. Add shallot and garlic and fry until translucent. Add shrimp and fry until they turn pink. Add a few spoonfuls of pasta water.

Add pasta to the pan along with the halved tomatoes. Add mozzarella and basil and heat through. Season to taste with salt, pepper and a drizzle of olive oil.
