Summer shrimp linguine
Ingredients

grater, peeler, 2 saucepans
Step 1/6
- 3¼ cups tomatoes
- 1¼ cups nectarines
- 2½ tbsp salt
- 2½ tbsp pepper

Peel tomatoes and nectarines, grate on large side of grater into a large mixing bowl, add salt and pepper
Step 2/6
- 1 lbs linguine
- saucepan
Boil salted water for pasta, cook linguine
Step 3/6
- 1 lbs shrimp
- 2½ tbsp vegetable oil
- 1 cloves garlic
- saucepan
Sauté shrimp and garlic in oil on medium high heat until cooked
Step 4/6
Combine tomato and nectarine sauce, and spaghetti with shrimp in the saucepan.
Step 5/6
Cook for about 15 minutes on medium heat, reduce to simmer
Step 6/6
- 1 tbsp basil
- ½ lemon
Serve with sliced basil, shaved Parmesan, and sliced lemon
