Solyanka (Russian sweet and sour soup)

Step 1/3
- 75 g German hunter sausage
- 75 g smoked pork loin
- 100 g pickles
- ½ onion
- 1½ cloves garlic

Dice sausage, smoked pork loin, and pickles. Peel and finely dice onion and garlic.
Step 2/3
- 1 tbsp unsalted butter
- pot (large)
Melt butter in a large pot and fry sausage and smoked pork loin for approx. 3 min., or until browned. Add onion and garlic and keep frying for approx. 2 - 3 min. more, or until translucent.
Step 3/3
- 2 tbsp tomato paste
- 340 g jarred bell pepper lecho
- 250 ml vegetable broth
- 25 ml pickle juice
- ½ bay leaf
- 1 tsp sweet paprika powder
- 1 tsp mustard
- salt
- pepper
- sour cream (for serving)
- bread roll (for serving)
Add tomato paste and canned lecho, and bring to a boil. Add vegetable broth, pickle juice, bay leaf, sweet paprika powder, and mustard. Simmer over medium heat for approx. 20 min. Season with salt and pepper to taste and serve solyanka with sour cream and bread rolls. Enjoy!
