    Prepare smoker by bringing the temperature to 200, but no more than 250 degrees Fahrenheit.

    • ¼ tbsp Kosher salt
    • tsp cayenne pepper
    • ½ tbsp N’orlens Cajuns seasoning

    Mix dry spices together in a bowl. Then lightly coat all sides of each chicken leg by picking up with clean dry hands and sprinkling over the chicken.

    When smoker is up to the desired temperature place the chicken legs on the grate.

    Cook for fourth five minutes on one side. Flip chicken over and cook on the other side until internal temp is near 160 degrees Fahrenheit.

    Create sauce by mixing items together in a bowl.
