Scallops with garlic and spinach rice noodles
Ingredients
Step 1/7
- 6 scallops
- 3 tbsp white wine
After cleaning your scallops, season them with white wine and left for 10-15 minutes, season each scallop with few drops of white wine.
Step 2/7
Take adequate amount of rice noodles and soak in cold water until it’s soft. Then, put the soaked rice noodles into newly boiled water and soak for 2 minutes. Take out the rice noodles from the boiled water right after 2 minutes and set aside.
Step 3/7
- 7 cloves garlic
Fry the chopped garlic in a frying pan with medium low heat, slightly more cooking oil to fry the garlic evenly. When garlic turned golden colour, remove the pan from the stove. As over cooked will lead to bitter taste.

- 1 package rice noodle
- 4 tbsp light soy sauce
- 2 pinches Salt
Divide your fried garlic into two portion (make sure one portion enough to put on scallops) together with the cooking oil. Don’t throw away the cooking oil please 🙈 The remaining portion of garlic and the cooking oil are use to season the cooked rice noodles. Both portion season with soy sauce and a pinch of salt according to your taste.

Follow the above photo, rice noodles at the bottom level, 2nd is scallop fresh, then the last on top will be the fried garlic with cooking oil. Leave the scallion behind🤣
Step 6/7
Placed all your scallops into a handmade “aluminium foil plate”/ plate and put into a steamer steam for 4 minutes.
Step 7/7
- 1 Scallion
Take out from steamer, place the scallops onto a plate. Pour the “steam water” that leftover on the handmade “aluminium foil plate”, this makes the scallops taste juicy! Spring the chopped green onions/scallion on top and your dish is done! ✔️ you may use white rice noodles too!
