Savory winter tarte tatin

Step 1/4
- 66⅔ g shallots
- 133⅓ g parsley roots

Peel and slice shallots into thin rings. Peel and slice parsley root into strips.
Step 2/4
- ⅜ tbsp olive oil
- ⅝ tbsp balsamic vinegar
- ½ tbsp honey
- salt
- pepper

Heat olive oil in a saucepan, then add shallots, balsamic vinegar, and honey. Season with salt and pepper.
Step 3/4
- 1 tbsp clarified butter
- 13⅓ g walnuts
- 2 sprigs thyme
- ovenproof pan
Melt butter in an ovenproof pan over medium heat. Add parsley root cut-side down and fry until golden brown, approx. 10 min. Add walnuts and thyme, then spread caramelized shallot mixture over the top. Season with salt and pepper, then remove pan from heat.

Preheat oven to 200°C/400°F. Roll out puff pastry and cut it slightly smaller than the pan. Cover pan with puff pastry and bake for approx. 30 min. Let cool for approx. 10 min., then carefully invert the tarte tatin onto a large plate. Slice and enjoy!
