Roast Butternut Squash, Lotus Seeds and Garlic Tahini
Step 1/4
- ⅔ butternut squash
- olive oil
- salt
- black peppercorn
- herbes de Provence
Chop up the Squash into cubes, and mix with olive oil and seasonings
Step 2/4
Oven bake squash cubes for 40 mins at 175 C for fan oven or 200 C for oven
Step 3/4
- 6⅔ Lotus seeds
- 1⅓ garlic
Flip the squash, one side should be soft, then put the whole garlic bulbs on the tray together with lotus seeds(can skip this if ingredients not available); then put back to oven for another 20 mins
Step 4/4
- 13⅓ g tahini
Depends on how you like the dish to be served, it can be served straight as it is (a salad or a light main ) or you can mash up everything and add 2 tablespoons of tahini for a rich flavour as a dipping sauce.
