Ingredients

shallot
2 cups
Mushrooms
salt

olive oil

rice

butter
  • Step 1/4

    • 1 tbsp garlic
    • ¼ cup shallot
    • 2 cups Mushrooms
    • ½ sweet potato
    • 2 tbsp olive oil

    Cook shallots and sweet potatoes until tenter and brown. Take out then add shallots and garlic for a few minutes.

  • Step 2/4

    • salt
    • pepper
    • ½ cup rice

    Add rice with shallots and garlic. Cook until lightly brown.

  • Step 3/4

    • 8 oz chicken stock

    Add chicken stock when rice it’s lightly browned. Slowly add stock until rice is tender.

  • Step 4/4

    • 2 tbsp butter
    • ¼ cup Parmesan cheese

    When rice is almost done add butter and cheese.
