"Looking for a speedy weekday lunch that’s both tasty and nutritious? Look no further than this one-pan dish featuring crunchy asparagus and tender shrimp. While some asparagus enthusiasts in Germany may consider this recipe unconventional, it's my favorite way to enjoy green asparagus at its peak (substitute with other crunchy vegetables like sugar snap peas or green beans). To use frozen shrimp as a pantry staple, this dish is both versatile and easy to make. Plus, if you happen to have shrimp with whole heads, frying them in the oil before adding the shrimp will add even more flavor. Don't have Shaoxing wine? No worries—sherry wine makes a solid substitute."

  • Step 1/3

    Defrost the shrimps if using frozen and remove the shell. Then add half of the Shaoxing wine, salt and pepper. Let marinate for approx. 5 min. In the meantime, cut off the woody end​​s of green asparagus and cut into approx. 5 cm./2 in. sticks diagonally. Mince garlic and ginger.

    • 225 g green asparagus
    • ½ clove garlic

    In a frying pan, heat oil over medium-high heat. Add shrimps and fry until they turn pink on both sides, approx. 1–2 min. per side. Remove from the pan and set aside. In the same pan, add more oil if needed, then add ginger, garlic, and chili flakes and fry until fragrant. Then add asparagus and fry for approx. 2 min.

Transfer to a plate, garnish with more chili flakes and sesame seeds, and serve immediately with cooked jasmine rice.
