Step 1/4
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 Thai chili
- 3 stalks scallions

Finely chop onion and garlic. Peel and slice carrot. Cut chili into fine rings. Cut the scallions in half, finely chop the green part, and chop the white part a little coarser.

In a wok, heat oil on high heat. Add garlic, onion, carrot, peas, chili, and the white part of the scallion. Sauté for approx. 2–3 min.

- 400 g rice (cooked)
- 3 tbsp sweet soy sauce
- 1 tbsp soy sauce
Then push the vegetables to the edge of the wok so that a well is formed. Add cooked rice in the middle, fry briefly. Then mix everything together and continue frying, until the rice becomes crispy. Next, add sweet soy sauce and soy sauce, continue frying the rice for approx. 5 min., until the sauce caramelizes.

Heat vegetable oil in a frying pan over medium heat. Crack in the eggs and season eggs with salt to taste. Continue frying until whites crisp on the edges and yolk is just set but runny in the center, or according to your preference. Serve the fried rice with eggs on top and garnish with remaining scallion greens. Enjoy!
