Pasta with anchovies and garlic breadcrumbs

- 5 cloves garlic
- 100 g Pecorino cheese

Finely dice garlic and set aside. Grate the Pecorino cheese. Bring a large pot of salted water to the boil.

- 2½ tbsp olive oil
- 70 g panko breadcrumbs
- 1 tsp lemon zest
- salt

Add half of the olive oil to a large frying pan and fry half of the garlic briefly. Then add the panko breadcrumbs, lemon zest, salt and fry for approx. 5 min., stirring frequently, until golden brown and crispy. Transfer the breadcrumbs onto a sieve or cloth. Cook pasta in salted water according to package directions.

- 4 anchovies
- ½ tsp chili flakes
- 1 tbsp lemon juice
- 2 tbsp butter
- 100 g Pecorino cheese

Clean out the pan and heat the remaining oil. Briefly fry the garlic, then add anchovies and chili flakes and fry for approx. 2 min. Deglaze with lemon juice and butter. Drain the pasta, reserving some of the pasta water. Add the pasta to the pan along with some pasta water and toss well. Remove the pan from the heat and stir the grated cheese and half of the breadcrumbs into the pasta.

Season the pasta to taste with salt and pepper and serve with the remaining breadcrumbs and fresh parsley. Enjoy!
