Omelet with radish greens
Step 1/3
- 1 bundle radish leaves
Wash, shake dry and coarsely chop radish greens.
Step 2/3
- 1 tbsp butter
- salt
Melt the butter in a medium-sized pan over medium heat. Add the radish greens and saute until fragrant and wilted(should only take a few minutes). Sprinkle some salt on them.
Step 3/3
- 2 eggs
Beat the eggs with a pinch of salt in a bowl and when they look homogeneous, pour them over the wilted radish greens. Cook the eggs on medium to low heat and when they´ve set enough fold the omelette in half or flip it with the help of a plate. I like my eggs to be cooked through, but stop the cooking process whenever the eggs reach the desired doneness.
