"The measurements may be a bit off as I never measure anything when I make something that’s been stewing in my head. I threw this together one night for a snack and it was delicious!!!! We ate it with baked pita chips! Perfect for a starter or a weekend snack."

Ingredients

mini cucumbers

onion
1 tbsp
rice vinegar
tsp
ginger paste
1 tsp
Cholula Hot Sauce
2 tbsp
honey
tsp
salt (optional)
  • Step 1/4

    • slice onion

    Finely chopped the onion more of a mince. (any onion you like; you can use more if you prefer the onion flavor and feel free in chopping it as you like)

  • Step 2/4

    • 10 cherry tomatoes
    • 6 mini cucumbers

    Chop in small cubes the tomatoes and mini cucumbers

  • Step 3/4

    • ½ tsp sesame oil
    • 1 tbsp rice vinegar
    • 1 tsp soy sauce
    • 2 tbsp honey
    • tsp ginger paste
    • 1 tsp Cholula Hot Sauce

    Place all in a bowl. Add the other wet ingredients and mix well. Feel free to change out the hot sauce for chili flakes or something more fierce!

    • tsp salt (optional)
    • tsp pepper (optional)

    Add salt and pepper to taste. The salt will bring out all the juice from the cucumbers and the soy sauce could be a bit salty. Feel free to add more or less to your taste buds desire!
