"One of the best combinations I know: Passion fruit and coffee. Those two together with some lime juice and some tequila make my new favourite drink for the summer. Don’t let yourself be put off by the coffee syrup: Once it’s done, the syrup will last you for up to six months if you sterilise the jar properly (see our kitchen tips below) – and the preparation time is then reduced to a mere five minutes."

    To make the coffee syrup, add espresso and brown sugar to a pot and bring it to a boil. Let it simmer at medium heat for about 20 minutes, stirring occasionally. Pour the liquid into a sterilized bottle. This makes about 250 ml of coffee syrup and can be used for other cocktails or desserts.

    • 500 g raw sugar

    • 80 ml lime juice
    • ice cubes

    Add 2 tbsp of coffee syrup, tequila, passion fruit nectar, and lime juice to a shaker. Fill the shaker with ice and shake it.

    • ice cubes
    • mint (for garnish)
    • cocktail strainer

    Remove the pulp of the passion fruit and add half of it to a glass. Add a large ice cube and strain the mix from the shaker into the glass. Garnish with fresh mint and the rest of the passion fruit pulp. Cheers!
