Juicy Shirazi Salad (Persian Salad)

- 2 cucumbers
- 2 red onions

Halve tomatoes, remove the stem, and cut into small, even cubes (approx. 0.5 cm/ 0.2 in.). Dice cucumbers to a similar size. Peel red onion and finely chop. Add all chopped ingredients to a large bowl.

- 1 bundle mint
- 1 lemon
- 3 tbsp olive oil
- salt
- pepper
- citrus press
Pick parsley and mint leaves, finely chop them, and add to the bowl. Dress with fresh lemon juice, olive oil, salt, and pepper, then mix everything well. Let the salad sit for approx. 10 min. before serving to allow the flavors to develop.
