Homemade marshmallows

Step 1/4
- 3¼ g corn starch
- 2⅜ g confectioner's sugar

Brush a baking dish with neutral oil. In a small bowl, combine corn starch with confectioner's sugar. Dust over baking dish to coat all sides.
Step 2/4
- ⅞ g gelatin sheets
- 12 ml water
- 4 g sugar
- 4¾ ml honey
- ⅛ tsp salt
- ⅛ tsp vanilla extract

- stand mixer or hand mixer with beaters
Add gelatin and most of the water to a stand mixer. Meanwhile, add sugar, honey, and remaining water to a pot. Stir to combine, and cook over medium-high heat until temperature reaches 120°C/245°F. Transfer to bowl of stand mixer and beat on low speed, gradually increasing the speed as mixture turns white and glossy. Add salt and vanilla extract, and continue to beat until bowl is completely cool to the touch.
Step 3/4
Transfer marshmallow to prepared baking dish and smooth the top. Dust with remaining confectioner's sugar mixture, and leave to set for approx. 4 hrs. or overnight.

Remove from pan and cut into squares. Roll each marshmallow in confectioner's sugar. Enjoy with hot chocolate!
