Homemade brioche

- 12½ ml whole milk
- 22½ g sugar
- 10 g fresh yeast

Add most of the milk to a pot over low heat. Add sugar and fresh yeast and whisk thoroughly.

- 125 g flour
- ¼ tsp salt
- ½ eggs
- 1¼ egg yolks
- 35 g unsalted butter

Add flour and salt to a stand mixer with dough hook attachment. Mix well to combine. While mixing on low speed, add two thirds of the eggs and all the egg yolks. Add yeast mixture to flour mixture and mix on medium speed until a smooth dough starts to form. Add butter to the flour mixture and mix until butter is completely integrated.

Lightly flour dough and work surface. Knead dough and form into a ball. Transfer to a lightly floured bowl, cover with a kitchen towel, and let rise for approx. 1 hr.

Preheat oven to 180°C/350°F. Flour work surface, knead dough, and roll into a log. Grease a loaf pan and transfer dough to loaf pan. Cover with a kitchen towel, and let rise for approx. 30 min.

- ¼ egg yolk
- 5 ml whole milk

Transfer to preheated oven and bake at 180°C/350°F for approx. 20 min. Remove from oven. Mix the remaining egg yolk and milk, and lightly brush on to bread. Return to oven and bake for another 15 – 20 min. or until golden brown. Enjoy!
