Grapefruit yogurt cake

Pre-heat oven to 200°C/400°F. Grease baking pan and line with parchment paper.

- ½ eggs
- 37½ g sugar
- ½ tbsp walnut oil
- 23⅓ g yogurt
- 37½ g flour
- ⅛ tbsp baking powder
- ⅛ grapefruit
- ⅔ tsp poppy seeds

Beat eggs in a large bowl. Add sugar and beat until frothy. Add walnut oil and yogurt, then sift in flour and baking powder. Zest one grapefruit and press the juice. Add zest and juice along with poppy seeds to the mixture and stir into smooth batter.

Add cake batter to baking pan. Place in oven for approx. 40 min., or until a toothpick inserted into the center of the cake comes out with a few moist crumbs. Remove from oven and place on a wire rack to cool.

- 16⅔ g confectioner's sugar

Peel half of remaining grapefruit and cut into thin slices . Press other half for juice. Combine juice with confectioner’s sugar, drizzle over cake, and decorate with grapefruit slices. Enjoy!
