  • Step 1/3

    • 650 g sweet potatoes
    • 1 tbsp olive oil
    • salt
    • pepper

    Preheat the oven to 180°C fan oven. Peel the sweet potatoes, cut into bite-sized cubes and place on a baking tray. Mix the sweet potato cubes, olive oil, salt and pepper and roast in the oven for approx. 20 minutes. Then remove from the oven and leave to cool briefly.

    • 1 red onion
    • 250 g cucumbers
    • 15 g cilantro
    • colander

    In the meantime, peel the red onion, halve lengthwise, and cut into thin half rings. Clean and wash the cucumber, quarter lengthwise and cut crosswise into pieces. Wash the coriander greens, shake dry, and chop finely.

    • 30 g roasted & salted peanuts
    • 3 tbsp smooth peanut butter
    • 1 tbsp maple syrup
    • 1 tbsp soy sauce
    • 3 tbsp lime juice
    • cup

    Put the ingredients for the dressing plus a little water in a cup and stir until smooth. Then place all the prepared salad ingredients in a bowl and mix with the dressing. Sprinkle the peanuts over the salad.
