Crispy fried chicken sliders

Step 1/4
- ⅛ red pointed pepper
- ⅓ red onions
- 16⅔ g iceberg lettuce
- ⅓ chicken breasts
- ⅛ package Doritos sweet chili pepper tortilla chips
- 2 slider buns

Thinly slice peppers and red onions. Finely chop the lettuce. Cut the chicken into small pieces. Place the Doritos in a freezer bag, crush finely, and add the pieces to a large bowl. Slice the slider buns in half horizontally.

- 25 g mayonnaise
- 1 tbsp sweet chili sauce

Preheat the oven to the highest grill setting. Butter the buns and toast them in the oven for approx. 3 min., cut-side up. Combine mayonnaise and chili sauce in a bowl, season with salt to taste.

- 16⅔ g starch
- ⅛ tsp baking powder
- ⅛ tsp salt
- 25 ml sparkling water

Whisk flour, starch, baking powder, some salt, and sparkling water together in a large bowl. Heat some oil in a pan. Salt the chicken pieces, dredge in extra flour, then place it in the tempura batter, shaking off any excess. Coat in the crushed Doritos, then fry the chicken fingers in the hot oil. Drain the chicken on a plate lined with paper towels, once cooked through and crisp on all sides.
Step 4/4
- 1 slices cheddar cheese
Spread the chili mayonnaise on both sides of the toasted buns. Place the chicken fingers on top and top with cheese. Finish with lettuce, sliced onion, pepper, and the top of the bun. Serve and enjoy!
