Creamy charred scallion dip

- 3 scallions
- ½ lemon

Trim ends from scallions and chop into lengths (about 1-in. / 2.5 cm). Halve lemon and cut one half into quarters for serving.

- 1 tbsp olive oil

- cast iron pan
- cooking spoon
Heat olive oil in a pan (preferably cast iron) over medium-low heat. Add scallions, season with salt and pepper, and brown for approx. 10 min., adjusting the heat as needed.
Step 3/3
- 100 g full-fat Greek yogurt
- ½ clove garlic
- olive oil (for serving)
- flaky sea salt (for serving)
- flatbread (for serving)

Transfer scallions to a bowl, reserving some for for garnish. Add lemon juice from lemon half, yogurt, and season with salt and pepper to taste. Grate in the garlic and mix to combine. Serve with olive oil, flaky sea salt, and reserved scallions on top. Enjoy with warm flat- or pita bread!
