"The classic Fanta Cake or “Fantakuchen” is more than just a simple sheet cake – it’s a bite of childhood, bringing back memories of birthday parties, colorful balloons, and carefree afternoons. And the best part? It’s incredibly easy to make! The base is a simple sponge batter, and while it’s baking, you can quickly whip up the creamy frosting. The secret behind its irresistibly fluffy texture lies in the carbonation of the soda, which makes the batter extra light—just like sparkling water does in pancake batter. The canned mandarins are a must for me, especially since they’re available year-round. But of course, you can always swap them for fresh mandarins! Since the cake is baked in a thin layer on a sheet pan, the baking time is relatively short. That means your slice of nostalgia will be ready in no time!"
