"Simple chickpea koftas that will please anyone and go with anything! This dish is extremely versatile so feel free to add anything you feel would work to the koftas! They are great for a quick dinner with some salad and sweet potato or for a lunch or snack. They are great for barbecues and kid friendly, and SUPER easy to make."

Ingredients

1 bag
canned chickpea2
carrots1
onion1 tbsp
mango chutney
½ tbsp
curry powder
½ tbsp
olive oil1 pinch
salt
1 pinch
pepperStep 1/5
- 2 carrots
- 1 onion
Grate the carrot and finely chop the onion
Step 2/5
- 1 bag canned chickpea
- 1 tbsp mango chutney
- ½ tbsp curry powder
- 1 pinch salt
- 1 pinch pepper
Combine all ingredients in a mixing bowl (except the olive oil) and mash using a fork

Once mashed, make 2cm thick disks out of the mixture- 2 per person
Step 4/5
- ½ tbsp olive oil
Fry the koftas in olive oil for 2-3 minutes each side or until cooked
Step 5/5
Serve onto a plate with salad and sweet potato fries (or whatever you want) Enjoy!
