Chicken Broccoli Fettuccine

Step 1/9
Preheat oven to 350 degrees F
Step 2/9
- 4 oz fettuccine noodles, broken in half
Cook fettuccine noodles according to box instructions.
Step 3/9
- ¼ chicken breast (4 oz)
Chop up chicken breast into smaller pieces. In a medium-sized pan, add water to cover the bottom of the pan, add chicken and cook over stove top.

- ¼ tsp garlic powder
- ¼ tsp Italian seasoning
- dash of pepper
Season chicken with garlic powder, Italian seasoning, and ground pepper.

- ¼ red pepper, chopped
- ¼ cup broccoli, chopped
- ⅛ cup onion, chopped
Add in red pepper, broccoli and onion to the pan with the chicken and cook another 3-4 minutes.

- ¼ can of cream of mushroom soup
- ¼ cup fat-free, reduced sodium chicken broth
- ¼ cup 2% reduced fat milk
In a large mixing bowl, add chicken and vegetables, noodles, soup, chicken broth, milk.

- 2 oz block of sharp cheddar cheese
- grater
Grate the cheddar cheese block and add 3/4 of the cheese to the large mixing bowl with the rest of the ingredients.
Step 8/9
Spray baking dish and spread ingredients evenly into dish.
Step 9/9
Top with remaining cheese. Cover with foil and bake for 40 minutes.
