Cabbage fritters with sriracha mayo

- 250 g white cabbages
- 1 stalks scallions

Use a mandoline to slice white cabbage into thin strips. Finely slice scallion.

- 2 eggs
- ½ tbsp light soy sauce
- ½ tbsp toasted sesame oil
- ¼ tsp salt
- 100 g flour

In a bowl, whisk together eggs, soy sauce, sesame oil, and salt. Stir flour into egg mixture, then fold in sliced cabbage and spring onion.

- 100 ml vegetable oil
- 1 tbsp lemon juice
- ¼ tbsp mustard
- ½ tbsp Sriracha

To make mayo, whisk egg yolk in a bowl and slowly pour in vegetable oil, constantly stirring, until a smooth mixture is formed. Add lemon juice and mustard to bowl, season with salt and sriracha, and mix to combine.

Add some vegetable oil to a pan. Ladle cabbage batter into the pan to form a pancake. Fry on both sides until crispy. Transfer pancake to a paper towel to absorb excess oil. Serve cabbage fritters with sriracha mayo. Enjoy!
