Brioche burger buns

1 frying pan, 1 cooking spoon, 1 bowl, 1 stand mixer with dough hook, 1 wooden spoon
Step 1/7
- 100 g Milk
- 160 g Strong white bread flour
- 1 frying pan
- 1 cooking spoon
First add 20g strong white bread flour and 100g milk into your frying pan, cooking on a medium-high heat until it thickens and turns into a white paste, setting aside to cool. This should take around 5 minutes.
Step 2/7
- ½ egg
- 5 g Milk powder
- 3½ g Instant yeast
- ½ tsp Salt
- 15 g caster sugar
- 1 bowl
- 1 stand mixer with dough hook
- 1 wooden spoon
In a bowl or stand mixer, add in the rest of the flour, eggs, sugar, salt, yeast, milk and milk powder. Mix until combined and knead the dough for around 10, it should end up smooth and no longer stick to you.
Step 3/7
- 50 g Butter
Now you can add your cubed butter to the dough, mixing it until fully combined. Then set aside for 2 hours to rise.
Step 4/7
After the dough has doubled in size, take it out of the bowl and weigh it. You should then divide this amount by 4 for larger buns or 6 for smaller buns.
Step 5/7
Split the dough into equal sized pieces, weighing them to make sure they are mass you got from the division. Roll each ball into a smooth bun and place on a baking sheet, set aside for another hour to proof.
Step 6/7

The buns should have doubled in size, and are now ready to be brushed with an egg wash and sprinkled with sesame seeds. Put them in the oven at 200 c or 392 f for around 15 or until golden brown.
Step 7/7
Take them out of the oven, leave the cool and serve.
