Bagel dumplings

- 100 g bagels (stale)
- 40 g smoked bacon
- ⅜ onion
- 100 ml milk
- ¾ eggs
- 20 g breadcrumbs
- 12 g butter
- salt
- pepper
- ground nutmeg

Cube bagels and add to a bowl. Finely dice bacon and onion. Heat the milk in a small saucepan over medium heat and season with salt and nutmeg. Pour the milk mixture over the bagel cubes. Add eggs and breadcrumbs and season with pepper. If the dough is too moist, add more breadcrumbs. Let rest for approx. 10 min.

Melt butter in a small frying pan over medium heat and sauté bacon and onion until crispy. Add to the dumpling dough and mix to combine. With moistened hands, form the dough into 8-10 dumplings. Bring a large pot with salted water to a boil. Reduce heat, add dumplings and let simmer for approx. 10-15 min.

In the meantime, heat beef stock in a small pot over low heat. Finely chop chives. Serve dumplings in a soup plate, pour the beef stock over, and garnish with chives. Enjoy!
