Apple hand pies

Step 1/4
- 87½ g flour
- 15 g sugar
- ⅛ tsp salt
- 57½ g butter (cold)
- 30 ml water (cold)

Mix flour, some sugar, and salt in a large mixing bowl. Cut butter into cubes, and work into flour mixture until large crumbs form. Add water a little at a time, and continue to mix until a smooth dough forms. Wrap dough tightly in plastic wrap and refrigerate for at least 2 hrs.

- 1 tbsp lemon juice
- 20 g sugar
- ⅛ tsp cinnamon
- ⅛ tsp ground ginger
- large saucepan

Meanwhile, peel apples, core, and thinly slice. Transfer to a saucepan with lemon juice, remaining sugar, cinnamon, and ground ginger and cook over medium-low heat for approx. 5 min., until slightly softened. Remove from heat and set aside to cool.

Preheat oven to 200°C/400°F and line a baking sheet with parchment paper. Lightly flour a work surface, unwrap dough, and dust with flour to prevent sticking. Roll out dough (approx. 0.5-cm/0.2-in. thick), and cut out circles using a cookie cutter or a knife. Divide apple filling between half of the dough circles, place the remaining circles on top, and press around the edges with a fork to seal. Transfer to prepared baking sheet.

Beat the egg and brush over hand pies. Sprinkle with sugar. Transfer to oven and bake at 200°C/400°F for approx. 20 min, until golden brown. Enjoy!
