A Summer Pasta Salad
Ingredients
Step 1/4
- 1 cups pasta
- water
- salt
Boil your pasta in water and season the water with salt. Let the pasta cool off before you move one.
Step 2/4
- ⅓ cup sweet corn
- ¼ cup frozen peas
- ½ zucchini
- ½ bell pepper
- ½ red onion
Chop your veggies into bite size pieces. Grill the zucchini in a pan. Heat up the frozen peas in a pan as well.
Step 3/4
- ⅛ cup olive oil
- 1½ tbsp white wine vinegar
- ½ tsp dill
- ½ tsp dried basil
- ½ tsp dried oregano
- ½ tsp mustard
- ¼ tsp garlic powder
- salt
- pepper
Combine all the dressing ingredients in a jar. Shake well so that the ingredients emulsify well.
Step 4/4
- ⅛ cup vegan feta cheese
Assemble your salad on a plate. Combine with the dressing and top with crumbles of the vegan feta cheese.
